Today is National Potato Day! To mark this solemn occasion on which each of us must silently reflect upon society’s preferred tuber, we here at Careline bring you a delicious series of ways in which to consume them.
Potato Salad
Appearance aside, part of the beauty of potatoes is their unparalleled versatility. Whether you’re looking for a quick bite or cooking up a meal worthy of a Michelin star or three, solanum tuberosum has your back.
At the simple end of the spectrum, nothing beats a good potato salad. Simply chop and boil some potatoes; put them in a bowl; add a mixture of mayonnaise and wholegrain mustard; add some chopped spring onions. Stir it up and that’s it! A perfect accompaniment to almost any dish.
Sour Cream Mashed Potatoes with Paprika
Without mash, the common sausage would be forever relegated to the confines of a floury bap. In mash, they have a true sibling. Everyone has their own preferences (dash of milk, skins or no skins, maybe some cheese, parsley, pepper), but this creamy variety, with cottage cheese, sour cream and paprika, adds a touch of class to proceedings.
Cypriot Style Roast Potatoes
A nice twist on the standard roast. Fill a deep oven tray with halved (quartered if they’re large) potatoes and thoroughly coat them in olive oil and the juice of 3-4 lemons. Season with salt and a generous amount of oregano.
Boil the kettle and add water to the tray until the potatoes are half covered. This helps boil them in the lemon as they roast, giving a unique texture and flavour. Whack the oven up to full and leave till golden brown.
Potato Gratin
For those who like their taters thinly sliced, this classic dish is the perfect meal. It combines potatoes (of course), cream, garlic and cheese to create a mighty creamy casserole.
Salmon and caper jacket potatoes
No starch-based list article is complete without the best dressed of the potato dinners. Always easy to prepare, there are a million ways to top them, from beans to cheese to tuna to chilli.
This recipe adds cream cheese and a flaked salmon fillet with capers for something a little different, perfect for a national potato day celebration (whatever that is).
